Summer Lovin’

We put together three simple but fun dishes, perfect for the summer season.

 

Edamame Chaat

Serves: 2

Prep time: 20 minutes

Cooking time: 5 minutes

Calorie count: 200 calories (per serving)

Ingredients:

½ tbsp spring onion greens, chopped

½ tbsp fresh coriander leaves

½ tbsp lemongrass, finely chopped

½ tbsp kaffir lime leaves, finely chopped

1 green chilli, chopped

½ tsp garlic, chopped

½ tsp fresh ginger, chopped

1 cup red, yellow and green bell peppers, chopped

2 tbsp tamarind dressing

½ tsp jaggery powder

1 tbsp butter

Fresh edamame beans

Method:

  1. Heat a pan and add butter to it. Toss in the edamame beans and cook for five minutes.
  2. In a large mixing bowl, add jaggery and tamarind dressing, and all the chopped bell peppers.
  3. Next, add chopped ginger, garlic, green chilli, kaffir lime leaves, and lemongrass.
  4. Add the cooked edamame beans and mix well.
  5. Garnish with chopped coriander spring onion greens.

Tip: Add puffed rice to the mixture for more texture.

 

Watermelon Carpaccio

Serves: 2

Prep time: 10 minutes

Calorie count: 300 calories (per serving)

Ingredients:

A few fresh mint leaves

1 tbsp almond flakes

1 tbsp pistachio flakes

100 g rabri

100 g rasmalai

¼ watermelon

Caramelized sugar sticks (optional)

Method:

  1. Deseed the watermelon and slice into thin medallions.
  2. Slice each rasmalai horizontally into two.
  3. First, place the watermelon medallions on the serving plate to form a circle.
  4. In the center of the circle, place a watermelon medallion and then a rasmalai slice on top.
  5. Repeat with another watermelon medallion and then a rasmalai slice to form a tower.
  6. Pipe some rabri on top and sprinkle almond and pistachio flakes.
  7. Finish with fresh mint leaves and caramelized sugar sticks.

Tip: You can replicate this with muskmelon.

 

Gulab Jamun Rabri Cone

Serves: 2

Prep time: 5 minutes

Cooking time: 5 minutes

Calorie count: 400 calories (per serving)

Ingredients:

1 tbsp almond flakes

1 tbsp pistachio flakes

200 g rabri

6-8 gulab jamun

For the waffle cone:

½ tsp vegetable oil

¼ cup powdered sugar

½ cup all-purpose flour

Water, as required

A pinch of salt

Method:

  1. Mix all the ingredients for the cone into a thin batter.
  2. Heat the waffle machine and pour the batter onto it.
  3. Remove when cooked and roll into a cone shape. Repeat until you have as many cones as you need.
  4. Once cooled, fill the cones with chilled rabri.
  5. Top with two pieces of gulab jamun.
  6. Cover with some more rabri, sprinkle almond and pistachio flakes, and serve.

Tip: Substitute rabri with sweetened hung curd for a healthier version.
